You will almost never see just one person eating Mansaf; instead, it is a dish made for special occasions, with a crowd of friends and family gathered around a single, massive tray. How can you not love that?<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">To understand why Mansaf is the national dish of Jordan, you have to look back at the Bedouins. Long before there were borders or cities, life in the desert was about survival and hospitality. Before Mansaf, there was a dish called <\/span><b>Tharid<\/b><span style=\"font-weight: 400;\">, a meal of meat broth poured over flatbread. It was practical for nomadic life because it used minimal water and could feed an entire tribe from one communal pot.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">The true soul of Mansaf is the <\/span><b>Jameed<\/b><span style=\"font-weight: 400;\">, and it was born out of total resourcefulness. Bedouin tribes needed a way to preserve milk during the dry season without refrigeration. They would pour fresh goat or sheep milk into a <\/span><b><i>Sa\u2019an<\/i><\/b><span style=\"font-weight: 400;\"> (a bag made from goat skin) and churn it for hours. This process separated the milk into two things: the fat used to make <\/span><b><i>samneh<\/i><\/b><span style=\"font-weight: 400;\"> (ghee) and the leftover liquid, which was a fermented buttermilk.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">Rather than letting that buttermilk go to waste, they developed a process to save it. They boiled the liquid until it thickened into a paste, salted it heavily to keep it fresh, and shaped it into hard balls to dry in the sun on top of their tents. These balls of Jameed could last for years. When it was time to feast, they would crush the stone-hard Jameed and rehydrate it into a rich, tangy broth. Because the buttermilk was fermented, it gave the broth a sharp, salty zing\u00a0 that perfectly cuts through the heavy fat of the lamb.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">As the dish evolved within tribes, it became more substantial. They began adding <\/span><b>bulgur<\/b><span style=\"font-weight: 400;\"> (cracked wheat) to the tray. Because wheat was a local crop grown across the Levant, bulgur remained an important part of the dish for centuries. This was the original version of Mansaf; nutty, heavy, and built to fuel the tribes through the desert.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">It was not until the early 20th century that the dish became what we know today. As trade routes became more established, rice became more accessible and slowly replaced the traditional bulgur wheat. This transition was a major milestone in Mansaf becoming the national dish of Jordan.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">Today, Mansaf starts with a base of <\/span><b>Shrak<\/b><span style=\"font-weight: 400;\"> bread soaked in Jameed. Then comes a layer of turmeric-stained rice topped with chunks of tender lamb, and finally, a garnish of pine nuts and almonds, a sign of <\/span><i><span style=\"font-weight: 400;\">karam<\/span><\/i><span style=\"font-weight: 400;\"> (generosity) from the host.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">In Jordanian tradition, Mansaf is also the center of the <\/span><b><i>Sulha<\/i><\/b><span style=\"font-weight: 400;\"> (reconciliation). When two families have a dispute, they sit around a tray of Mansaf to seal their peace. Eating together from the same tray, using only your right hand to roll the rice into a <\/span><b>lukma<\/b><span style=\"font-weight: 400;\"> (perfect bite), is a sign that all is forgiven and the bond is restored.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">1.5kg lamb shanks<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 tbsp ghee<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Water<\/span><\/li><\/ul><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 bay leaves<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">5 cloves<\/span><\/li><\/ul><p>\u00a0<\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">4 cups of medium grain rice<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chopped parsley<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Pine nuts<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Almonds<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Shrak bread\u00a0<\/span><\/li><\/ul><p>\u00a0<\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Jameed<\/span><\/li><\/ul><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">Spice Mix*:<\/span><\/p><ul><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bc tsp cumin<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bc tsp paprika<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 cardamom pods<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tsp turmeric<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 clove<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bd tsp allspice\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">\u00bd tsp salt<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"><br \/><\/span><strong><i>Method of Preparation<\/i><\/strong><span style=\"font-weight: 400;\"><br \/><br \/><\/span><\/li><\/ul><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Salt the lamb shanks.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Place a pressure pot on the stovetop on high heat and add 2 tbsp of ghee.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sear the lamb shanks.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Take the lamb shanks out once they have a beautiful brown color.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Dispose the leftover ghee from the pot.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Place lamb shanks back into the pot and cover with water. Bring the water to a boil. Foam will come to the surface of the water. Using a ladle discard the scum and keep doing so until none is left.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add 2 bay leaves and 5 cloves into the water.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cover and reduce the heat to low.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cook for 30 minutes. By that time, the lamb should become extremely tender.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">-While the lamb is cooking, rinse the rice and place aside.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Take the lamb shanks out of the broth and place into another pot. Add the jameed over the lamb. Place it on the stovetop on medium-low and gradually add a few cups of broth until you reach your desired consistency, depending on how thick or thin you would like your jameed.<\/span><\/li><\/ol><p><i><span style=\"font-weight: 400;\">*Make sure to let the jameed stay at a simmer not a boil.<\/span><\/i><\/p><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In another pot, add 2 tsp of ghee on medium heat.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the rice and 1 \u00bd tsp of the spice mix. Add about \u00bd tsp of extra turmeric so the rice is slightly yellow. Then mix everything together.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add enough lamb broth over the rice until it covers the rice by about an inch.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bring the water to a boil on high heat. Once it boils, reduce the heat to low and cover the rice, letting it cook for about 17 to 20 minutes, and then remove it off the heat.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">On a wide serving tray, place the shrak bread as a base. Using a ladle, add some jameed over the shrak bread.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Put the rice on top, and then the lamb over the rice. Pour jameed over the rice and lamb.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Toast pine nuts and almonds in ghee until golden brown and place them over the rice.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Finish with chopped parsley and enjoy with friends and family!!<\/span><\/li><\/ol><p><br \/><br \/><\/p><p><span style=\"font-weight: 400;\">Notes:<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">*Using a pestle and mortar, bind the spices together to create the spice mix.<\/span><\/p><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">**If you\u2019re able to find jameed:<\/span><\/p><p><span style=\"font-weight: 400;\">Crush it into small pieces and soak it overnight. Using a blender, blend the jameed with the water it\u2019s been soaked in. Put it aside.
